Basic Tomato Sauce
I usually end up making my Tomato Sauce differently each time, but this method is sort of the backbone I use. You can mix it up by adding veggies, meat, cream, sugar, honey... whatever. But you should always make sure you simmer it for at least an hour.
Ingredients:
1 can of Whole Plum or Crushed tomatoes
2 cloves of garlic, sliced or minced
1 tsp Dried oregano
1 tsp Dried Basil
1/4 cup red wine (I like Marsala)
1/4 cup Olive Oil
Sweat the Garlic and Herbs until the garlic is lightly golden. Crush the tomatoes with your hands, or in a food processor. Add the crushed tomatoes to the pot with the garlic and oil, and let it come to a simmer. Add the wine (and sugar/honey if you want).
Let it simmer, uncovered, on low heat for 1.5 to 2 hours, or until it's as thick as you like.
Add your pasta right to the sauce and enjoy!
