Mango Salsa
Recipe:
5 - 6 Small Tomatoes
1 Small Red Onion
1 Mango
2 Cloves of Garlic
2 Jalapenos (One Seeded, one Roasted)
1 Bell Pepper
Juice of 1 Lime
Salt, Pepper, Cilantro to taste
Finely Chop Everything and mix it all together! If you want to thicken it up a bit, try hitting it with a stick blender briefly.
To Fire Roast a the peppers, put them right over an open flame until the skin is thoroughly charred. Place them in a tight container for 10 minutes to steam the skins. After 10 minutes, rinse the peppers under tap water to help remove the skin. Then chop as you usually would.
