Guacamole
RECIPE
3 Avacados
2 Shallots
1 Serrano Pepper
1 lime (juice and zest)
Cilantro (to taste)
Kosher Salt (to taste)
Slice the Serrano pepper and Shallots. Rinse your cilantro and chop it up fine. Divide your chopped cilantro into 2 halves and set aside one of the halves.
Spread your sliced serrano pepper, shallots, and half of your cilantro on your cutting board. Sprinkle over some kosher salt and mince. As you mince the veggies, smash them with the flat of your knife every few seconds. Do this until you have a very fine mince, or a very rough paste.
Pit and scoop out the flesh of 3 avocados into a bowl. Zest and juice your lime, and add it in with the avocados. Finally, mix everything in with the avocados and mash with a potato masher (unless you actually have a cool mortar and pestle)
At this point you should make sure you've added enough salt. Taste for seasoning and cover with plastic wrap. Let it sit in the refrigerator for at least a half hour before you serve it up to your friends.
