Simple Hamburgers

 

So this is a super simple way of cooking hamburgers, and how I learned to make them years ago.  Let me know what you like to do!

Recipe Per Hamburger:
5oz 70%/30% Beef (the more fat the better!)
Salt and Pepper

Form the beef into patties, 5oz each.  Try to work them in your hands as little as possible.  Salt and Pepper one side of the burger.  Kosher salt is my favorite.  

Light up some coals, heat a Griddle, Cast Iron Pan, or anything cast iron to about 350 - 400 degrees.  Place the burgers Salt/Pepper side down.  Then salt/pepper the other side.  

Cook the burgers on the first side until they start to bleed nicely, and until the bottom is nice and brown.  I feel it's okay to lift the burgers up slightly to peek at the bottoms, but never flip the burgers over until they're ready.  

After you flip the burgers over... don't ever flip them again.  Check their doneness by giving them a little poke.  I like a burger pretty rare, but in this video I made one a little more toward medium.  Cook it however you like!  

I like to toast the buns in the grease, and I like my burger with Mayo on the bottom, and ketchup on top with pickles.  Yes I do.
