Meat Sauce

This is my go-to recipe for comfort food.  I love making big batches of it on Sundays, and eating it for days after.  

Ingredients:
Olive Oil
1 lb of Ground Beef, Pork, Chicken or Sausage
6 Cloves of Garlic, minced
2 sprigs of Rosemary, chopped
1 28oz can of Plum Tomatoes, crushed
1 cup of White Wine
1 cup of Whole Milk

The recipe is simple.  Brown the ground meat (I like pork) in olive oil.  I like to use a large dutch oven over medium-high heat.  Add salt when you first throw the meat in the pan, then add the chopped Garlic and Rosemary and cook stirring for a minute or two.  

Deglaze the pan with 1 cup of white wine and boil it down to a simple syrup, still over medium-high heat.  Be careful not to burn the wine and reduce it too far!  

Next add in 1 cup of whole milk and do the same thing you just did with the wine.  Cook it down until it forms a nice thick sauce.  

Finally add your crushed tomatoes and make sure to rinse the can with water and add that to the pot.  At this point I like to add about a 1/2 cup to 1 cup of water, because I know it's all going to evaporate out.  

Let it simmer on low heat for 3 hours.  It'll thicken up and tenderize the meat fantastically.  

Before you add your Pasta, taste it to see if you want to add any more Salt, or Sugar if you like it.  

Cook your pasta as instructed on the package, but reserve 1/4 cup of the pasta water and ladle that into the sauce.  Add your pasta, cover and let it sit for a few minutes, and serve up!  

BTW:  I love this dish with Tagliatelle, but lately I've been eating it with Spinach Linguine and I love it.
