BST (Bacon Spinach Tomato Sandwich)
Technique:
Bake or fry some bacon. I bake my bacon on a sheet pan with a cooling rack placed in the center. The bacon cooks on the rack, the fat collects on the bottom so you can save it for later.
Mix 5 tbsp honey with 3 tbsp mustard and 2 tbsp white wine vinegar. Toss with spinach.
Grow a tomato. Slice a tomato.
Assemble over your favorite bread.
Heat any large, cast-iron implements over medium high heat for 5 minutes. I used a skillet and a griddle. Before pressing, turn off all burners! There will be enough heat in the cast iron to toast the sandwich nicely.
Press your sandwich with your cast iron, or panini press, and enjoy!
