Backyard Chili

Currently my favorite way to cook Chili.

In a Dutch Oven with oil or bacon fat add one large red onion, chopped, and 2 peppers, chopped.  I like one red and one yellow.  Add salt and about 3-4 Tbsp of Chili Powder (I use homemade).  After 10 minutes, add 1.5 lbs of ground beef, pork, or sausage.  Add one 12oz bottle of beer, 1 24oz can of crushed tomatoes, 2 chipotle peppers and 1 Tbsp of the Adobe sauce from the chipotle can.  Add sweet corn (cut from about 2 ears) and one 16oz can of black beans.  Add about 1/4 cup of cornmeal.  Cook for 2 to 4 hours at a low simmer, or in the oven at 200 degrees.  

You can also do this in a slow cooker!
