Chicken Wings

This recipe was inspired by Chef John of Foodwishes.com, Alton Brown of Good Eats, and America's Test Kitchen.  Try it out, and change it around!  

4 Lbs of Chicken Wings 

For the Spice mixture:
1 1/2 Tbsp Kosher Salt
1 Tbsp Smoked Paprika
1 Tbsp Garlic Powder
2 Tsp Black Pepper
3 1/3 Tbsp Baking POWDER

Buffalo Sauce!  
3 oz Melted Butter
1/3 Cup Hot Sauce
Paprika (to taste)
Pepper (to taste)

Put all your chicken pieces in a bowl and sprinkle on the dry rub mixture.  When all the wings are coated, move them to a baking sheet lined with Foil and place a cooling rack on top.  Arrange the pieces on the sheet and bake them in a 400 - 425 Degree oven for 20 minutes.  Take them out, Flip them, and put them back in for another 20 minutes.  Take them out, Flip them (yet again), and place them back in the oven for a final 15 - 20 minutes (or until they're nice and crispy.  

To make the sauce, heat the butter and Hot Sauce in a pan.  Add the spices and let it simmer on low for 10 minutes or so.  Vigorously stir the mixture to emulsify it before dumping it on the wings.  Toss the wings to coat and then put them in your mouth!
