Bean & Cheese Enchiladas

Feel free to stuff these with whatever you want. I think these are meant to be messed around with. The way I see everyone make Chicken Enchiladas involves shredding up some chicken, mixing it with the enchilada sauce, then stuffing as usual. These are a blank canvas. Start experimenting.

INGREDIENTS

  • 3 Red Peppers

  • 1 Yellow Onion

  • 14oz Can of Diced Tomato

  • 12oz Water (rinsed from the Canned Tomatoes)

  • 1-2tbsp Chili Powder (or 1 tbsp Garlic Powder/1tbsp Paprika/2tsp Cumin)

  • 10 Corn Tortillas

  • Any Cheese you want (I like Cotija)

  • Black Beans (Or any Bean)

  • Cilantro/Pickled Jalapeno to garnish
