The first in my video series based around Simple Cheap Cooking - created for those of us who wish TV food personalities would shut up.
This is not authentic. Add Okra or File powder to come closer, but my way is cheaper and just as tasty.
Recipe Follows -
1 Hot Sausage
(Whatever meat/seafood you feel like, really)
1 Green Pepper
(Whatever vegetables you feel like, really)
Enough Chicken Stock/Water to Cover (This video used 2)
2 - 3 Cloves Garlic
1 - 2 tsp Paprika
Cayanne pepper to taste
Black Pepper to taste
Salt to taste
1 - 2 bay leaves
4 tbsp Oil (This recipe used Olive)
3 tbsp Flour
Yes, this is a thinner Roux than usual.
Serve over Rice.
